Pasta all'amatriciana.

Ingredients (Serves 2):

2 Slices of smoked bacon, cut in thin slices
½ onion finely chopped
1 garlic clove
100g of chopped tomatoes
1 tbsp olive oil
200g of your favorite pasta

Directions

Bring a large pan of water to boil, salt it with a small fist of salt and throw in the pasta.
While the pasta cooks, heat up the olive oil, the crushed garlic clove in a pan with the chopped onion. After 3-4 minutes toss in the bacon slices for 5 minutes on a medium flame. When the bacon gets crispy add the chopped tomatoes to the mix and simmer for another 5 minutes. If you like spicy foods I definitely advice adding some chili for that extra kick. Tip: keep the sauce pan covered with a lid, if the mix gets too dry add some water from the pasta.
Mix with the pasta (after draining!) with the sauce and season to taste with grated parmesan cheese, freshly ground black pepper and salt. Enjoy!
