Pasta With Vegetables

Welcome to my quick and easy pasta website, featuring some of my favorite recipes. These are presented in an easy, understandable and foolproof way, for people that (like myself) want to get straight to the table without even having to pull out the scale, in a max of 15 minutes! Feel free to tweak the recipes as you like, and remember...it's all about being creative!

Penne with vegetables.

Ingredients (Serves 2):

1/2 a pepper in three different colors (looks matter!)
1/2 medium sized red onion
1 garlic clove
100ml chicken stock
1 tbsp olive oil
200g of Penne Pasta
 


Directions

Bring a large pan of water to boil, salt it with a small fist of salt and throw in the pasta.
While the pasta cooks, heat up the olive oil in a pan. Toss in the crushed garlic clove and chopped onion for 3-4 minutes on a medium flame. Cut the peppers in thins strips and throw them in. Add some stock to the mix when the vegetables have been cooking for another 3-4 minutes. Tip: keep the sauce pan covered with a lid, if the mix gets too dry add some water from the pasta.
Mix with the pasta (after draining!) with the sauce and season to taste with parsley, freshly ground black pepper and salt. Enjoy!
